Lemon Saskatoon Muffins are delicious. Plus how great is it to bake with berries you handpicked?
If you love a crispy crumble topping then mix these ingredients together and set aside before you begin the next step:
•1 tsp flour
•2 tbsp brown sugar
•1 tsp butter
• optional nuts
If you’re happy with regular muffins then go ahead and proceed without doing this step and begin here:
In one bowl combine:
• 1 egg
• 3/4 cups milk
• 1 tsp vanilla
In another bowl, toss together:
• 1 1/3 cups flour
• 1/3 cup sugar
• 2 tsp baking powder
• pinch of salt
• a hefty helping of lemon zest (I like lemon zest I use almost 1/3 cup)
Preheat the oven to 400°f and prepare your muffin tins.
While the oven heats up, cut 1/4 of cold butter into the flour mixture until it is finely distributed.
Pour the milk mixture into the flour mixture and stir just to moisten. Fold in saskatoon berries and spoon into muffins cups.
If you made the crumbly topping then this is the time to sprinkle it all over the muffin tops.
Bake for 18-20 minutes
